Upside down Pineapple Cake


Teringat saya semasa flatting kt melville grove, ada seorang flatmate saya ni pernah mem buat upside down pineapple cake utk menambat hati kenalan baru dia..maklumlah kenalan ni dtg drp US semata2 nk berkenalan dgn kwn drp Sudan ni...

so hari ni saya cuba buat kek ni...walaupun tak de cherry...pineapple sahaja..so boleh jugak la kan...kiranya nk menambat hati suami lah ni...
saya buat kek ni after my oatmeal biscuit..(awat rajin benor cik oiiii.... ) ntah ler... musim2 sejuk ni... cepat lapaq...n bila dan lapaq tuh carikla benda nk di ngap...
hari tuh dok borong coklat hazel nuts n almond nuts...hahahaha abih la angan2 nk berdiet...

baiklah ...di sini resipinya..

Ingredients

Pineapple topping
60 g butter
½ cup brown sugar, firmly packed
1 x 470 g can pineapple slices
Glace cherries

Cake
125 g butter
¾ cup caster sugar
2 eggs
2 cups self-raising flour
¼ cup milk

Method

  1. Pineapple topping: Drain pineapple, reserve ¼ cup of syrup for cake.
  2. Blend soft butter with brown sugar (do not over mix) and spread over base of greased deep 20 cm round cake tin.
  3. Arrange pineapple slices and cherries decoratively over brown sugar mixture.
  4. Cake: Cream butter and sugar, adding eggs one at a time, and beat until light and fluffy.
  5. Fold in sifted flour, syrup and milk, and beat lightly until smooth.
  6. Spread cake mixture evenly over pineapple slices.
  7. Bake at 180°C for 1 hour.
  8. Stand 5 minutes before turning onto serving plate.

Recipe notes

Can be eaten as a cake or served warm with custard or cream


Oatmeal and Raisin Biscuit

I've posted the recipe on my facebook yesterday...hoping that I will bake it one day...ermmm probably today..;-) ..so..thank you autumn for giving me the chance to stay at home and become a good housewife..
I 've longed for a healthty homemade biscuits.. and walla..today i made one... despite of having eggs, butter and sugar... oats has dominated their tastes and my hand can't stop for more..huhu
so here it goes..

Ingredients

180 g butter, softened
1 cup firmly packed brown sugar
2 large eggs
1 teaspoon vanilla
1 cup plain flour
¾ teaspoon baking powder
½ teaspoon cinnamon
2 cups rolled oats
1 cup raisins

Method

  1. Cream butter and sugar, until well mixed, but don't overbeat or the mixture will be too soft.
  2. Beat in eggs one at a time, beat well after each addition.
  3. Stir in the vanilla.
  4. Sift together flour, baking powder and cinnamon and stir into the creamed mixture.
  5. Add the oatmeal and raisins and stir until thoroughly blended.
  6. Using a tablespoon, drop small heaps onto trays.
  7. Bake 180°C for 12-15 minutes until lightly browned.

well being in Chc and living in an old house... making the 'softening' of butter interesting...
I'd spent more time mixing sugar and butter together than I usually did...
This recipe is sooo easy... even you can ask your hubby to do it...:P
