Eggless Chocolate Cake recipe

Eggless Chocolate Cake recipe: "

Eggless Chocolate Cake Ingredients

4 oz Butter 4 tb Cocoa Powder
4 oz Sugar 2 cn (170gms/159ml) Evaporated
8 oz Plain white Flour 135 g Warm Water
1 ts Baking Powder 1 ts Vanilla essence
1 ts Bicarbonate of Soda

Instructions for Eggless Chocolate Cake

1. Cream the butter and sugar together till light and fluffy 2. Sift together the white flour, baking powder, bicarbonate of soda, and the cocoa powder. 3. Add the flour mixture along with all the other ingredients and beat together until the mixture is well blended. 4. Line a cake pan with greasproof paper 5. Pour the cake mixture into the pan and bake in oven 180 degrees or gas mark 3/4 for 40 minutes. Check if cake is ready by inserting a skewer. 6. Leave to cool in the pan. This cake needs frosting. Coconut cherry cupcakes

The results are very marvelous..my hubby loves them.. tastalicious...never thought that cupcakes can be irresistible..
Ok guys... this is my first try for coconut cherry cupcakes.. I wish i went for cherry picking last week darn!!! So just forget the plain looking cupcakes..and please concentrate with its taste..as I mention before..it's damn tastalicious!!!

Cupcakes
125gm butter, softened
1 cup caster sugar
1 tsp vanilla extract
2 eggs
1/2 dessicated coconut
1/2 cup milk
1/2 cup fresh cherries , pitted and chopped --- I have to skip this
1 1/4 cups self-raising flour, shifted
extra cherries to decorate

pink icing
1 1/2 cups icing sugar
juice of 1 lemon
a few drops of red food colouring
1-2 tbsp boiling water



1. Heat oven 170C .
2. Beat butter until white + creamy ..add sugar + vanilla and eggs (one at a time)
3. Stir in coconut + milk and cherries...then flour make sure ingredients turn into smooth batter.
4. Spoon into paper casings, 3/4 full. Bake for 20-25 mins
5. Make the icing
6. Top the cupcakes with icing n cherries.

Really wish I can ice the cuppy but unfortunately, the icing sugar kinda taste wierd..so my hubby reckon i should just leave them in their original..the taste that counts...
and I wish I have the self raising flour.. I got mine mixture of the plain flour and baking powder..and the cherries too..
too many ingredients left out and it's for me to improvise..LOL

Momma's Buttermilk Brownies

Today , got invitation from K Gayah and family. I couldn't go empty handed could I.. so as I flicking the 'Brownies to die for!' book... came across this recipe...must try i cried..
Tried a recipe before and found out that, a tastalicious brownies is the one mixed with creamy, fudgy, chocolathy taste.. and here it comes... momma's buttermilk brownies.

Don't have everything so need to improvise accordingly.

Brownies base

1/2 cup unsalted butter, softened to room temp.
1 cup water
2 cups unbleached all purpose flour
2 cups granulated sugar
2 tbsp. unsweetened cocoa powder, shifted
1/2 cup buttermilk
1 tsp baking soda
2 large eggs, lightly beaten

Frosting
1/4 cup unsweetened cocoa powder, shifted
1/3 cup buttermilk , room temp.
1/2 cup unsalted butter, softed to room temp
4 1/2 cups confectioners' sugar (icing sugar
1 tsp. pure vanilla extract

Note: for frosting however i just use cadbury's dark cooking chocolate ... microwaved with some butter added... lazy me..LOL

Steps:
Heat oven 375 degrees, lightly grease a square 15x10x1" baking pan.
Place butter in a large mixing bowl.
Bring water to boil ( use kettle).
Pour water over butter, stir until totally melted.

Add flour, sugar and cocoa powder ---> beat slowly and once blended beat medium-high speed.
Add buttermilk, baking soda, eggs ---> blend well
Spread into the prepared pan.
Bake 15- 20 min ( tested with skewer inserted in the centre and comes out with a few moist crumbs attached.)
Cool pan completely on a wire rack.

Frosting:
Combine cocoa and buttermilk in a large saucepan.
Bring to boil , whisking until smooth and blend.
Remove from heat and add butter --> stir until butter totally melted.
Frost the cooled brownies and cut into bars...---> makes about 4 dozen.

to get more flavour:
Spread some nuts on top of the brownies.

Walla...... suits summer tea party of 2 ...hehehe



Note on buttermilk:
Buttermilk is a fermented dairy product produced from cow's milk with a characteristically sour taste. The product is made in one of two ways. Originally, buttermilk was the liquid left over from churning butter from cream. In India, buttermilk (chaas) is known to be the liquid leftover after extracting butter from churned curd (dei). Today, this is called traditional buttermilk. On the other hand artificially made buttermilk, also known as cultured buttermilk, is a product where lactic acid bacteria called Streptococcus lactis have been added to milk.[1]

To substitute , combine 1 tbsp lemon juice/apple cider vinegar with 1 cup whole or 2 percent milk. let stand at room temp for 15 min.---> I don't have buttermilk so I've settled with cider vinegar and milk.

Resipi - Ayam Rendang Berlada

Ayam masak rendang berlada


Bahan-Bahan

1 ekor ayam - dipotong sederhana

20 tangkai lada kering - dikisar

10 ulas bawang kecil - dikisar

6 ulas bawang putih - dikisar

3 cm halia - dikisar

3 cm kunyit hidup - dikisar-- takdak so guna serbuk ajer

3 cm langkuas - dikisar-- takdak.. tak sempat carik kt asian shop

4 batang serai - dikisar

500 ml santan

4 helai daun limau perut-- tak dak. jugak..

2 helai daun kunyit-- lagi la tak dak...

2 helai daun salam

Sedikit minyak untuk menumis

secukup garam

Cara Cara

· Panaskan minyak kemudian tumis bahan-bahan yang telah dikisar hingga garing.

· Masukkan ayam, santan dan garam secukup rasa.

· Gaul ayam dengan bahan tumisan tadi hingga sebati. Biarkan ianya mendidih hingga ayamnya betul-betul masak.

· Akhir sekali masukkan daun kunyit, daun salam dan daun limau perut.

· Taburkan bawang goreng sebelum menghidangkannya.

----- I can't claim yg di masak ialah ayam rendang berlada...byk sgt la bhn 2 mentah tropika yg takdak..huhuhu tapi boleh la kan.. ada gak la rasa-rasa rendang tuh.. hehehe sampai org kata cam ayam percik kelantan..????

Resipi - Mee Hailam

Alhamdullillah .. yesterday we invited some frens for makan-makan. My initial plan was Nasik Minyak + Ayam Rendang Berlada..then changed to Mee Goreng ( homemade noodle) but finally it was Mee Hailam.

Since I never had any officially big announcement for open house before..well i might say that this is the first time we held such a big event .. it was quite difficult to estimate the food so that it is proportionally enough with our guests..but it went fine ..as nothing was to much to be ditch to the drain..
My Mee Hailam was the hit of the day.. eheheh this is my first time as well serving Mee Hailam... so since it went very well with my guests .. so I guess it worth putting the recipe here ... so leps ni tak yah sibuk carik...



MEE HAILAM

Bahan-bahan

1 kg mie/kueh teow/mee hoon (6/8 orang)--- hohoho we made around 4 kg of egg noodle.. but the guests were nearly 50 people???

6 biji bawang putih (tumbuk/penyekkan)

rencah ayam/udang/sotong -- I went with chicken small pieces and sotong

sos tiram

garam secukup rasa

6 biji cili api -- no cili api.. just cili kering blended

3 sudu besar tepung jagung (cairkan dalam setengah cawan air sejuk)

sayur (kobis bunga/sawi/carrot/baby corn) -- carrot and kubis + tauhu + tomato (I love tomato)

Cara-cara

· Tumiskan bawang putih dan cili api. Kalau dah garing letakan rencah, kemudian letak air 3 cawan dan garam secukupnya.

· Masukkan sos tiram setengah botol kecil. Kemudian masukkan air tepung jagung utk pekatkan kuah.

· Masukkan sayur2 an dan mie. --- for serving purpose.. I put the kuah dlm rice cooker and set to 'keep warm'.. or kalau nk cepat boleh jek tekan 'cooking' then bila depa nk makan ... senduk la sendrik kuah..huhuhu..enjoy.




Resipi- Never Fail Chocolate Cake

Got the recipe from Buk Dewi The Palms Albany. Never fail to satisfy chocolate lovers..especially with chocolate topping --- best served hot..
finger licking chocolatey moisty cake..

Bahan2 :

2 cups flour
13/4 cups sugar
1 tsp baking powder
2 tsp baking soda
1/2 tsp salt
1/2 cup cocoa
1 cup cold black coffee
1/2 cup soya oil(any other cooking oil is fine)
1 cup milk
3/4 tsp vinegar
2 eggs
1 tsp vanilla

Cara2:

Grease and flour large cake tin. Combine all ingredients together in bowl. Do not sift any of the dry ingredients. Whisk or stir mixture until smooth. Mixture will resemble a liquid consistency (don't worry about that). Preheat oven to 175 degree or 350 franheit and bake for 1 1/4 hours (check cake in the last 20 mins if you have a hot oven).

Resipi - Moist Fruit Cake

MOIST FRUIT CAKE

250g butter , at room temperature

225g brown sugar

500g quality mixed dried fruit

100g dried apricots , chopped

100g glaced cherries , quartered

Finely grated rind and juice of 1 orange and 1 lemon

100g chopped pecan

Sift together

350g self-raising flour

2 tsp mixed ground spice

½ tsp freshly grated nutmeg

4 large eggs, beaten

Method

Line base and sides of a deep 23 -25cm round cake pan with greased baking paper.

Place butter , sugar , dried fruits , cherries , orange and lemon rinds and juice in a large saucepan. Heat gently, stirring occasionally, until the butter melts and the sugar dissolves.

Simmer for 10 minutes and remove from the heat . Leave to cool for 15 - 30 minutes

Stir pecans into the fruit mixture

Stir sifted dry ingredients into the fruit mixture together with the eggs . Mix Well .

Spoon cake mixture into the prepared pan. Smooth and level the surface . bake in preheated oven 150Cfor 1 hour 15 minutes to 1 hour 30 minutes or until a skewer inserted into the center of the cake comes out clean.

Cool cake in the tin.

Kerana Donut

Sepanjang Ramadhan ni tak sangka-sangka En Shamsul nk menjual donut..kami namakannya Donut Sonoda..huhuhu ni sure pasal dah boring dok rumah..sbb kat sini Cik Ct dah tak leh nk ajak En Shamsul guna internet kt opis lagi..maklumlah internet kt UC ni bercatu!!!

Apa pun ni kami katakan rezki Ramadhan.. selain drp kita berniat membantu org di bulan Ramadhan ..menghilangkan keinginan orang.. tak perlu la memerah tenaga ke dapur nk buat donut...
dpt juga menambahkan pendapatan....
Selain itu dpt juga merapatkan ukhuwah... drp tak kenal jadik kenal... dan jadik sahabat..
Murah sahaja donut ni .. di pasaran 5 biji= 2 dolar.. murah kan!!!! kalau Dunkin' Donut eheheh muchkin pun tak dapat..eheheheh

Resipi nyer senang ajer... erk.. kita letak bahan jek la.. sbb sukatan dia En Shamsul yg buat...so nanti kena tanye dia..huhuhu
honestly memang dh lama saya tak buat adunan donut.. cuma sekadar tolong-tolong goreng sahaja.. itupun masa awal-awal hari tuh..

Tepung -- kami guna high grade.. hari tuh tukar ke home brand plain flour.. tak beberapa jadik..so switch balik ke high grade pams

instant yeast
butter
milk powder
gula
Telur
garam secukupnya
air

dan bread maker utk menguli

bila dah naik doh... ketap dgn acuan donut.. or buat bulat2 dan lubangkan tengahnya.. dan goreng...

boleh salut ngan gula halus ( castor sugar) dan cinnamon...

Kueh Pedas

Ni adalah resipi family En Shamsul. Disebabkan bonda En Shamsul dah expert buat kueh ni.. selalunya dia akan agak2 sahaja.. huhuhuh dan diturunkan resipi pun hanya kasik tau bahan sahaje..

Bahan-Bahan:

1 kilo Tepung
2 cup Minyak
Garam secukup rasa
Air secukupnya

Sira Sambal:

1 biji bwg putih
2 sudu Cili kering di blender
1 cawan air asam jawa
2 sudu gula
garam secukup rasa


Campurkan bahan-bahan ni dan uli sehingga sebati. Kosistensinya seperti kulit karipap tetapi kena lebih keras lagi.

Kemudian Adunan di nipiskan dgn pasta machine. Dan seterusnya set ke bentuk jejari pada past machine tersebut.

Kemudian jejari halus adunan tadi digoreng dan disira dgn sambal.

Utk sira .. masukkan bahan sira dan masak sehingga pekat dan berbuih. Then siram atas jejari yg telah di goreng.. di kacau rata..boleh di tabur gula utk lagi sedap.

Menu hari ini...Part 2

Wah ..hari ni memang balas dendam ke dapur nampaknyer..ehheheeh almaklumlah...
ok kali ni buat roti jala pula.. resipi pun drp internet gak ..dunia tanpa sempadan la katakan..
Pilihan resipi menjadi rujukan ialah yg ni: ( sumber maybe drp mesra.net or resipi.net..ehheeh tak sure la pulak ..)

Roti Jala:

400 gm Tepung gandum ( Ori : 600 gm )

3/4 can santan ( Ori : 1 can)

2 sudu tepung custard - utk colouring .. ada jugak org letak colouring kuning...well up to the cook la kan..hheheehh..

1 biji telur ( Ori : 2 biji)

1 1/2 gelas air ( Ori : 3 gelas) ikut kelikatan bancuhan

Garam secukupnya..( Ori : 1 sudu besar)

Cara Cik CT:

Masukkan bhn kedalam blender dan blend.. kalau rasa terlalu pekat letak sedikit air..then letak dlm bekas dan bersedia utk memasak roti jala atas kuali.

Cara Original : Bancuh tepung dengan santan, garam dan telur hingga sebati. Tuangkan air sejuk (jika suka boleh gunakan santan cair) kacau lagi hingga rata. Jerangkan kuali leper dan sapu minyak. Bila panas kiraikan adunan tepung tadi ke atasnya. Bila masak angkat dan lipat jadikan tiga segi. Hidangkan dengan kuah kari atau kurma.


Nota kaki: Make sure bancuhan benar-benar halus jgn ada berketul-ketul..senang guna blender. semasa gunakan acuan..make sure dekat dgn kuali.. kalau tidak akan roti jala yg terhasil akan terputus-putus.

Menu hari ini...Part 1

Alhamdulillah dah 19 hari telah kita lalui Ramadhan tahun ni. Tahun ni Ramadhan ada perbezaannya..kerana baru sekali berbuka di rumah..tak macam tahun lepas..hari2 buka berdua.
Kali ni byk berbuka di masjid An-Nur ataupun bersama-sama adik undergraduate.
So, tidak byklah menu yg dibuat or in other term, saya tak prepare utk berbuka sgt.. cuma masak utk bersahur saje..selain drp balik drp opis pun dah lewat..selalunya sampai rumah lewat 530 ptg atau lebih. En Shamsul pulak bz dgn pasar Ramadhannya menjual karipap dan donut Sonoda.

Hari ni cuti, so tiba-tiba rasa nk buat roti jala dan kueh tart gulung.
Maka mencarilah resipi tart gulung.. I chose one and gave it a try..huhuuh...

Jem Nenas Using Canned Pineapple

Filling:
2- Can Pineapple di blender. ( I used homebrand sbb gi countdown tadi..eheheheh)
1- Cup Sugar
1 Teaspoon cinnamon powder ( Ori resipi : 1 Tablespoon ground cinnamon)
4 kuntum bunga cengkeh ( Ori resipi : l Tablespoon ground cloves)


Ori resipi ada guna rose water and sedikit colouring kuning, but i compared with other recipes.. depa guna daun pandan sajer.. dulu2 masa kt kampung pun buat inti ni ada gak la letak daun pandan.. so I think pandan ok...tapi saya tak letak sbb lupa nk beli...kuikuikui...
Kaler kuning lupa lak nk beli..tak pe lah.. kasik original colourlah..
So ingredients tuh sume di masak..hahahah masak filling nenas ni memang lama.. so kalau boleh masa blend tuh kurangkan air ..lagi byk air.. lagi lamalah nk masak filling ni. masak hingga dia agak berkilat dan melekit.
Eventhough tuan nyer resipi suh tunggu semalaman..ni nk cepat nyer keje.. dah sejuk jek terus guna ..heheheeh

Kueh Tart yg telah di gulung bersama inti

Pastry Tart:

1 1/2 -Cup Flour
2- Tablespoon Corn Flour
4 0z ( 114 gm ) butter
1 egg
1/4 cup sugar ( ori : 1 cup sugar... adoi manisnya..)

Pukul adunan butter n gula hingga halus gitoh.. kemudian letakkan telur sehingga fluffy..( ala-ala cam buat kek.. colour akan bertuka agak keputihan). kemudian add bhn2 kering...dan uli sebati.. kemudian masukkan kt dlm machine utk dptkan bentuk cookies tuh...dan potong ikut saiz yg sesuai.. letak inti dlm dia n then gulung...Sebelum bakar sapu telur atas dia nk kasik cantik..then bakar.. saya guna suhu 200 C selama 15 minutes or sampai kekuningan.. jgn hangus pula ya..!!
Adunan ni makes around 35 biji..erm.. nampaknyer kena wat lagi ni..tak cukup nk buat raya..huhuh... Selamat Mencuba..

Tart untuk dimakan

Result: Kueh tart agak memuaskan..kerana Cik Ct suka kalau kueh tart ni lembut dan berderai..ni agak kurang berderai..mungkin kena lebihkan butter .

Diagnosis: kemungkinan kerana menggunakan tepung high grade sbb tepung high grade ni berat sket berbanding dgn plain flour.
