Carrot Cake

Dah lama betul tak hupdate blog ni..huhu..maklumlah sekarang ni rasa ok sket nk masak2 hujung minggu..
so disebabkan ada Mr Manager nk sgt makan carrot cake ala Puan Fariza ( err.. ni dah terbalik mengidam ni..)..so dia dgn gigihnya mendapatkan resipi drp Auckland.. haha..thanx kpd Puan Fariza kerana sudi berkongsi resipi yg marvellous ni..

Bhn-bhn

4 biji telur
1 and 1/4 cup canola oil ...vegetable oil pun bole ( guna canola la kan..)
1 cup brown sugar ( brown sugar dh habis.. dpt 1/4 cup jaa...haha..)
1 cup white sugar ( in total I used 1 1/4 cup white sugar)
3 teaspoons of vanilla essence
2 cups of all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoons salt
3 teaspoons ground cinnamon
1/4 teaspoon nutmeg
3 cups of grated carrot
1 cup chopped walnut ( lebih kurang 2 paket Tasti cooking walnut... kasik hancur sket..)
225g of crushed pineapple (squeeze the juice as much as possible- lebih kurang 1 can of pineapple crushed)
pan measurement: 9X 13 in pan

caranya:

preheat oven to 175 Celcius
grease and flour (atau line je dgn baking paper) a 9" X 13" pan
beat together eggs, oil, sugar and vanilla.
mix in flour, baking soda, baking powder, salt, cinnamon and nutmegs
225g of crushed pineapple (squeeze the juice as much as possible)...
--- ni ada org dah tersilap timbang..haha..I bought the 450gm can of pineapple crushed and deliberately divide it into two..sepatutnya....I drained sume and timbang..which I expect kena guna satu tin terus..so next time terus drained 1 can of pineapple crushed wokey..

last sekali masukkan pineapple and carrots
masukkan walnuts dan lepas tu masukkan dalam acuan
bakar for 40-50 minute until toothpick inserted comes out clean
let cool then frost dgn cream cheese frosting

walla... senang jek... dan bila dah masak letak le frosting..
bestnyer resipi ni..sbb dia guna minyak so tak perlu lagi pukul mentega hingga kembang2 gitu..


to make frosting:
combine 1/2 cup softened butter, 8 oz softened philadelphia cream cheese and icing sugar (1 and 1/2 cups) and 1 teaspoon vanilla extract
beat until smooth & creamy
frost the cake
utk frosting ni..ada jugak org letak lemon sket..so ikut la rasa apa yg suke..

this is my cake.. dah tinggal sket jek..tapi Mr manager kata it taste wonderful even without frosting ??? hahaha sbb mr manager malas nk tolong frosting..so apa nk buat ngan Philly cheese yg dah beli??
takpe la next time kita buat lagi carrot cake ni..

Tepung pelita

Bahan-bahan ( 12 cups- bergantung pd saiz bekas )

* 1 cawan tepung beras
* 1 cawan gula
* 5 cawan air
* 4 sudu besar tepung beras(ratakan)
* 1 biji kelapa diperah jadi 4 cawan santan
* 4 helai daun pandan dimesin dgn sedikit air
* sedikit kapur dan sedikit garam --- kapur tak jumpa carik kt sini..duh!!

Cara-cara

1. Tepung, air, gula, air daun pandan dan air kapur dibancuh hingga sebati.
2. Perah santan, masukkan tepung yg 4 sudu tadi dan garam. Kacau sehingga sebati dan ketepikan.
3. Masakkan tepung yg diadun dan kacau hingga masak dan berkilat.
4. Bila dah masak masukkan dalam acuan yang disukai. Kalau daun pisang lagi sedap.
5. Masak santan yg diadun tadi dan kacau sehingga pekat.
6. Angkat santan dan curah ke atas tepung yg di dalam acuan tadi.
7. Sejukkan


Hari ni ada bazaar Ramadhan..undergrads buat. Mr Manager cuba la nk buat kueh tepung pelita ni...leceh nk buat kotak 4 segi drp daun pisang..cup plastik pun jadik la ...ye tak..rasa-wise ...boleh la jual..hihihi.. takde la susah sgt pun buat kueh ni..bancuh2 then masak cam masak custard jek..maybe next time cuba guna bekas daun tuh la..

Kuey Tiaw Ladna

Hari ni lunch kuew tiaw ladna. Mr Manager cuba buat kuey tiaw pulak setelah berjaya membuat mee kuning sendiri..dgn adanya internet.. memang mcm2 boleh cuba.

So ada mcm2 resipi membuat kuey tiaw ni.. ada yg di my resipi.net... tapi percubaan kali ini hanya dgn menggunakan putih telur dan tepung gandum biasa shj. then uli2 ngan breadmaker.. then masukkan kt pasta maker... walla... jadik la kuey tiaw..
tapi disebabkan tak letak tepung beras ( spt dlm resipi tu ) warna kureng putih..dan agak terlebih kenyal sedikit..it's okay next time add tepung beras and see how it goes...

Jadiknye ..bila dah ada kuey tiaw.. tercari2 la resipi nk buat ape.....so.. hasilnya.. kues tiaw ladna..cuma tertinggal cili cuka shj..saya ikut resipi di my resipi : http://www.myresipi.com/top/detail/721

  • kueh teow ( homemade..)
  • 3 ulas bawang putih dicincang kecil2 ( 2 ulas shj )
  • 2 sudu minyak
  • 2 sudu sos tiram
  • sekeping dada ayam (guna daging shj)
  • lobak merah
  • kobis bunga (guna capsicum)
  • 2 sudu besar tepung jagung
  • cili padi( x letak)
  • kobis ( guna celery)
  • air
  • garam
Extra ikut citarasa cik Siti
  • 2 bili telur di pecahkan ketika mendidih
  • sedikit black pepper/pepper
  • tauhu potong 9

Cara-cara

  1. panaskan minyak. masukkan bawang putih dan goreng sehingga kuning. masukkan daging yg dipotong kecil2.
  2. Bila daging dah masak, masukkan sos tiram. goreng seketika. masukkan air mengikut keperluan.
  3. masukkan lobak merah terlebih dahulu.
  4. bila dah nak mendidih masukkan sayurandan garam dan masukkan tepung jagung yg dibancuh dgn air utk memekatkan kuah.
  5. Setelah kuah mendidih, pecahkan telur dan masukkan tauhu
  6. Masukkan kueh teow.
  7. Jgn biarkan lama sgt, agak-agak telur hampir masak.. angkat dan hidangkan.

Inilah dia hasilnya.....kuey tiaw ladna yumm yumm..

Oat Biscuits

Oat Biscuits recipe

ingredients

4 oz (100 g) porridge oats
1/2 cup (50 g) 2 oz flour, sifted
1/3 cup (75 g) 3oz caster sugar (superfine granulated)
2 oz (50 g) desiccated coconut
1 teaspoon baking powder
1 stick (8 Tbsp)4 oz (100 g) butter or margarine, melted
1 egg, beaten

method

1. Mix together the oats, flour, sugar, coconut and baking powder.

2. Add the butter and egg and blend well.

3. Roll out the mixture to 1 cm (1/2 inch) thickness and cut into shapes with biscuit cutters.

4. Place on a greased baking sheet and bake in a preheated moderate oven 180°C (350°F) Gas Mark 4 for 20 minutes.

Kek Gula Hangus

Sebenarnya nk buat kek ni utk sbb dah lama betul tak buat...huhu.Dulu-dulu masa nk raya.. saya selalu disuruh mak buat kek ni..ikut buku resipi dia la..hehehehe mak saya ni suka mengumpul resipi..dia gunting drp majalah dan surat khabar..tapi sekarang saya ni malas la nk buat cam tu.. carik kt internet jek senang. Tapi kadang2 tak jadi..kadang jadi..errr..maksud saya resipi internet ler..ke apa2 resipi pun..hehehehe..ye la selagi tak cuba..tak tahu la jadi ke tak...
saya ni pulak..selalu nk buat resipi yg senang2..yg x perlu byk bahannya..dan jugak banyak perkakas...nanti senang sket nk basuh...ye tak..

Bahan-bahan ( 1 )

  • 1 cawan gula - untuk karamel
  • 1 cawan air panas
  • 1/2 cawan gula
  • 1 cawan tepung gandum
  • 1/2 cawan susu segar
  • 2 sudu teh soda bikarbonat
  • 4 biji telur ( use size 7-8)
  • 2 sudu makan butter/marjerin (use butter)

Cara-cara

  1. Panaskan 1 cawan gula dalam periuk sehingga menjadi karamel(perang dan cair semua gula..jangan sampai hitam legam hangus)
  2. Padamkan api. Masukkan 1 cawan air panas (air gula karamel nanti akan meruap, jadi berhati hati dan pastikan periuk cukup besar untuk megelakkan tumpah. Air mesti air panas, kalau sejuk, nanti karamel akan terkezut dan terus keras). Kacau dan masukkan butter dan 1/2 cawan gula lagi. Biarkan sejuk.
  3. Pukul telur sampai kembang. Saya guna blender saja. Masukkan tepung, susu, soda. Blend hingga sebati.
  4. Akhir sekali masukkan karamel yang telah disejukkan tadi dan blend lagi hingga sebati
  5. Perapkan lebih kurang 30 minit. Masukkan kedalam acuan yg telah disapu sedikit butter. Bakar selama 30-40 minit (oven 160 darjah)


What i like the most about this recipe ialah blender..sumenya guna blender jek..senang betul...
dan hasilnya pun sedap...sampai tak sempat nk ambik gambar..huhuhu...next time i'll put the picture...

Potato Bun ala Jusco

Hari ni try potato bun . I lurveeeeee Jusco's potato bun.. dulu2 masa kalau balik drp hostel sure beli potato bun ni kat Jusco.. sedap giler lebih-lebih lagi masa hot-hot ..gebu lak tu.. dulu murah ja.. sekarang ni dh mahal.. last time beli bulan March hari tuh dlm RM 3.80 !!! dulu2 baru brape jek..dah tu sekarang cam kurang ummpphhhh..cam nipis ja..

so semalam semasa tunggu Mr Manager ambik.. sempat la browse carik resipi potato bun ni..walla... ada dekat myresipi..http://www.myresipi.com/top/detail/3581

Bahan-bahan ( 10 biji bun kecil )

I got 6 buns (using muffin pan ) and 3 buns with cookies pan.

  • 135 ml air ais . (note: plain water from the tap..should be cold enuf this winter season..)
  • 3/4 cmt garam
  • 30 gm mentega atau marjerin (note : use butter)
  • 1/2 biji telur (dipukul sebentar)( note : use ... I think size 7-8)
  • 60 gm ubi kentang (direbus dan dilenyek baru ditimbang) ( note: use nearly 100gm..don't the rest get wasted)
  • 300 gm tepung roti/tepung protin tinggi
  • 3/4 cmb susu tepung
  • 50 gram gula
  • 2 cmt yis segera
  • Topping untuk membuat garisan kastad Tepung kastad segera (instant custard powder) Bancuh dgn air utk mendapatkan pes yg lembut. ( I got to make my own custard cream resipi Custard cream cik siti)
  • Kalau takde tepung custard segera tu buatlah cream custard mcm biasa dan jalurkan pada roti kentang nanti.

Custard cream Cik Siti

2 tbp custard powder
2 cups of milk ( this time I use SoGood Vanilla Flavoured Soymilk )
2 tbp sugar or to taste


Cara-cara to make custard cream

Satu kan semua ingredients dlm periuk dan masak dgn api yg sederhana. Kacau bancuhan sehingga likat. Untuk tahu samada custard dah masak, bancuhan akan menjadi kental dan kelihatan berkilat. So bolehlah tutup api dan biarkan sejuk..


Cara-cara

  1. Masukkan semua bahan ke dalam mangkuk adunan dan uli hingga licin lebih kurang 15 minit.
  2. Tutup dengan wrappers dan biar naik selama 45 minit.
  3. Tumbuk doh perlahan utk mengeluarkan udara yg terperangkap dan uli selama 1/2 minit.Note : Step 1-3 since saya menggunakan breadmaker, saya setkan kpd pizza dough dan biarkan naik sehingga double the size.then baru di tumbuk utk kuarkan udara.
  4. Bentukkan menjadi bebola yang setiap satunya seberat 30gm (tak timbang pun tak per, pakai agak2 jer la saiz tu).
  5. Susunkan ke dlm loyang yang telah digriskan. Tutup lagi dan biar naik lagi selama 40 minit. Note : I don't have any special place to keep the buns unless they dehydrated.. so I just leave the buns in the oven (heat -off) and wait until they get double in size.
  6. Tepi2 loyang pun griskan la jugak supaya roti tak melekat nanti lepas b akar. Kalau tak nak griskan loyang dan nak lapik dgn aluminium foil pun boleh..
  7. Sapukan telur yg telah dipukul ke atas roti (tadikan kita guna 1/2 biji saja utk masuk ke dlm adunan, so yg 1/2 baki lagi tu gunalah utk tujuan ini).
  8. Paipkan kastad ke atas roti. Bakar pada suhu 180C selama 20 minit (tapi perhatikan juga sbb kalau dh nampak roti bertukar perang dan masak sebelum 20 minit tersebut, tutup sius dan biarkan roti masih di dalam oven hingga cukup masa 20 minit).Note : Old oven with no timer..so I have to check them from time to time..huhuhu..

Ini dia roti kegemaranku..potato bun... siap dah kena carik custard tu...ahahahaha tak menayabor -nyabor nk makan...isk isk..

Yang ni letak dlm muffin pan..oklah senang nk makan..

Mee Bandung....

Layan jek la... hari ni masak mee bandung.. mee homemade..dan ikut resipi kt internet..boleh tahan jugak..so now I know rahsia mee bandung.. rahsianya adalah pada udang keringnya...kalau tak byk tak umppphhhh ...
kali pertama buat mee bandung.. so ada sket cair laa..maklumlah tak pandai budget..hihi..tapi insya'allah next time akan cuba...spt org korea kata "aja-aja.."( kena ada gaya skali ...spt yg dikatakan oleh kawan korea ku David..)

Ingredients:
1 kg yellow noodles
10 pieces dried chili (remove seeds, boil and sieved)
1 clove garlic (crushed)
5 pcs red onions
½ cup dried shrimps, boiled with a cup of water (alternatively use sotong rendam, boiled, in the style of Mee Bandung Tanjung Agas, Muar)
½ cawan fresh prawns
1 cup of beef - boiled (thinly sliced 3mm)
Chinese Cabbage (Sawi) - cut 1 inch length
Cabbage - sliced ½ inch
¾ - 1 cup sugar
3 - 4 cups beef stock
1 tablespoon)oyster sauce
Eggs
Salt
Vegetable oil
Other ingredients such as shredded chicken, fishballs, squid etc, can be added according to individual preferences.
Daun sadri & daun bawang, (optional, sliced)

Technique:
Blend dreid chilli, dried shrimp and its stock, sugar, garlic & red onion.
Heat up vegetable oil in wok (kuali).
Fry all grounded ingredient till light brown.
Add in oyster sauce.
Add in shrimp and boild sliced beef.
Add in sawi sawi dan cups of beef stock and salt. Simmer until slightly thick.

Serving suggestion:
Serve by portion, boil an egg in gravy for each serving. An authentically cooked Mee Bandung Muar will have the egg yolk about half cooked.
Take a portion of gravy for one person meal. Heat it and add in an egg till half boiled. Add in vegetables till soften and lastly add in yellow noodles.
Serve in a flat bowl with half boiled egg on top, sprinkle with daun sup & daun bawang.


Tips:
Authentically prepared Mee Bandung Muar do not include sour ingredients such as tomato puree/tomato sauce/cili sauce/and tamarind paste (asam jawa). This is done by some stalls in KL and this actually spoil its authentic taste.

Upside down Pineapple Cake


Teringat saya semasa flatting kt melville grove, ada seorang flatmate saya ni pernah mem buat upside down pineapple cake utk menambat hati kenalan baru dia..maklumlah kenalan ni dtg drp US semata2 nk berkenalan dgn kwn drp Sudan ni...

so hari ni saya cuba buat kek ni...walaupun tak de cherry...pineapple sahaja..so boleh jugak la kan...kiranya nk menambat hati suami lah ni...
saya buat kek ni after my oatmeal biscuit..(awat rajin benor cik oiiii.... ) ntah ler... musim2 sejuk ni... cepat lapaq...n bila dan lapaq tuh carikla benda nk di ngap...
hari tuh dok borong coklat hazel nuts n almond nuts...hahahaha abih la angan2 nk berdiet...

baiklah ...di sini resipinya..

Ingredients

Pineapple topping
60 g butter
½ cup brown sugar, firmly packed
1 x 470 g can pineapple slices
Glace cherries

Cake
125 g butter
¾ cup caster sugar
2 eggs
2 cups self-raising flour
¼ cup milk

Method

  1. Pineapple topping: Drain pineapple, reserve ¼ cup of syrup for cake.
  2. Blend soft butter with brown sugar (do not over mix) and spread over base of greased deep 20 cm round cake tin.
  3. Arrange pineapple slices and cherries decoratively over brown sugar mixture.
  4. Cake: Cream butter and sugar, adding eggs one at a time, and beat until light and fluffy.
  5. Fold in sifted flour, syrup and milk, and beat lightly until smooth.
  6. Spread cake mixture evenly over pineapple slices.
  7. Bake at 180°C for 1 hour.
  8. Stand 5 minutes before turning onto serving plate.

Recipe notes

Can be eaten as a cake or served warm with custard or cream


Oatmeal and Raisin Biscuit

I've posted the recipe on my facebook yesterday...hoping that I will bake it one day...ermmm probably today..;-) ..so..thank you autumn for giving me the chance to stay at home and become a good housewife..
I 've longed for a healthty homemade biscuits.. and walla..today i made one... despite of having eggs, butter and sugar... oats has dominated their tastes and my hand can't stop for more..huhu
so here it goes..

Ingredients

180 g butter, softened
1 cup firmly packed brown sugar
2 large eggs
1 teaspoon vanilla
1 cup plain flour
¾ teaspoon baking powder
½ teaspoon cinnamon
2 cups rolled oats
1 cup raisins

Method

  1. Cream butter and sugar, until well mixed, but don't overbeat or the mixture will be too soft.
  2. Beat in eggs one at a time, beat well after each addition.
  3. Stir in the vanilla.
  4. Sift together flour, baking powder and cinnamon and stir into the creamed mixture.
  5. Add the oatmeal and raisins and stir until thoroughly blended.
  6. Using a tablespoon, drop small heaps onto trays.
  7. Bake 180°C for 12-15 minutes until lightly browned.

well being in Chc and living in an old house... making the 'softening' of butter interesting...
I'd spent more time mixing sugar and butter together than I usually did...
This recipe is sooo easy... even you can ask your hubby to do it...:P

chocolate cake....wow!!!

BAHAN A
250 gm butter
250 gm gula perang atau kastor
4 biji telur gred B
1 sudu kecil esen vanilla
250 ml susu segar

BAHAN B [ Ayak ]
290 gm tepung gandum
50 gm serbuk koko
1 sudu kecil nescafe instant
1 sudu besar baking powder
1/2 sudu kecil soda bikarbonat

CARA
1. Butter dan gula dipukul sehingga kembang.
2. Masukkan telur satu persatu. Pukul lagi. Masukkan esen vanilla
3. Masukkan Bahan B yg telah diayakkan berselang seli dengan susu segar.
4. Kacau rata dgn senduk kayu.
5. Masukkan dalam loyang yg telah dilapikkan kertas dan bakar dalam oven yg telah dipanaskan suhu 170′C selama 45 minit atau sehingga masak.
6. Sejukkan dan hiaskan dengan topping coklat.

COKLAT TOPPING
1 cawan susu pekat
60 gm butter
50 gm serbuk koko
1. Kacau secara double boiler sehinga larut dan sejukkan sekejap.
2. Tuangkan atas kek dan hias.

Kueh Seri Muka

First time nk buat kueh Seri Muka hari ni ..credit to Fariza kerana letak resipi dekat blog dia..so I copy paste jek the recipe. Alhamdulillah berjaya jugak membuat kueh ni..cuma kena improve sket drp segi topping hijau tuh..since I used the blender so masa kukus ada bueh2 halus.. so it's good to note that before tuang ke atas pulut tuh , ditapis bancuhan hijau ...taste dia memang sedap dan kerana topping hijau lembu and yet tak terlalu keras...I like it...


Kueh Seri Muka

First of all, thanks to Aunty Heng Jin for the recipe. I don't know where she got it, but here it is:
A ingredients
300 g glutinous rice(soaked overnight)
1 cup of santan (coconut milk)
1 teaspoon of salt
2-3 daun pandan

Mix all the ingredients above and place the pandan leaves on the rice. Steam for 15-20 minutes or until the rice is cooked.

while steaming the rice, mix the ingredients below:

B ingredients
4 eggs
8 tablespoons sugar----> I put 6 Tablespoons for obvious reason..hehehe
1 and 1/2 cups santan
4 tablespoons all purpose flour

***** I blended all B ingredients to get smooth batter, but don't forget to tapis the batter as to remove bueh2 halus..********

Once the rice is cooked, press the steamed rice with the spoon. But first, do not forget to grease the back of the spoon with any cooking oil as to avoid the rice from sticking to the spoon. Then, pour the egg batter onto the rice, and steam for another 25 minutes or until the top part solidified.

******When using Silicon baking pan, I must say that extra pressure is needed when levelling the glutinous rice to ensure firm, even texture..***********

Ok guys... hope you're face will glow with no blemishes after eating this kueh... berseri2 gitoh...

Masa nk potong ..kena make sure kueh bebetul telah sejuk.. dan use clean sharp knife..don't worry topping hijau tak hancur..


Close up...as i pointed out before.. kena tekan kuat sket pulut tu... but not too bad for a first timer eh???


Tu dia.... dalam sarung silicon lagi..since takde pan 4 segi... bulat pun boleh la labu....hehehehehe as mentioned before I have to get rid of bueh2 halus on top of the green topping..

Pau

Last week buat pau..tak sure mana En Shamsul ambik resipi.. masuk bread maker then buat bulat2 letak inti..hehehehe inti kelapa ...so boleh laa ...baru nk guna kukus 2nd hand ...lepas ni boleh la kukus mengukus kekdahnye...




Pau belum kukus... awat la lapik dia besaq sgt..hahahaha

Pau sedang siap sedia utk di ngap...hehehehe

Tomorrow i'll be having guests from Auckland..so i baked this banana cherry cake for them..since i got extra fresh cherry ( bought from Funky Pumpkin) . It was sooooo easy.....yup..cherries do mix well with banana and coconut ( from previous attempt ...my husband love it!!) . I also managed to freeze half of the cherries for future projects..
to keep it frozen, simply pitted the seeds out ( or else it will spoil the taste) and cook them with sugar + ascorbic acide ( I don't have this.. so settled with sugar only) and they can last for a year.

SERVES 12 (change servings and units)

Ingredients

Directions

  1. In a large bowl, combine the flour, baking powder, salt, suger.
  2. In a smaller bowl, mash the bananas.
  3. To the bananas, add the eggs, vanilla extract, milk and oil and mix. Combine cherries into the mix.
  4. Add the wet mixture to the other dry ingredients in the large bowl and mix.
  5. Spray the baking tin with cooking spray (alternat
    ively, grease tin with butter but I line the tin with baking paper).
  6. Pour batter into baking tin and cook in a oven pre-heated to 375 degrees for 1 hour 10 minutes.
  7. Remove cake from oven and allow to cool
    for 20 minutes. Turn cake onto a plate and allow to cool
    .

    Jemput makan...hehehehe
